Make this tasty treat as a breakfast side dish, or put some toothpicks in them and serve at your next potluck, or even have them around as a snack.

Bacon Wrapped Sweet Potato
2 small sweet potatoes, peeled and cubed
½ pound Bacon
1/4 c brown sugar
Preheat oven to 400ºF. Cut bacon into 2 or 3 even pieces. The size of your bacon depends on how small your sweet potato cubes are cut. Wrap each sweet potato cube in bacon (toothpick helps hold it all together). Sprinkle each with a little brown sugar then a dash of cayenne. Bake about 20 minutes or until bacon is crispy and sweet potatoes are soft.
